Healthy Protein Pancakes

Here's a great recipe for delicious pancakes packed with protein.  Great for that healthy yet lazy Sunday morning.  


Ingredients


  • 23g coconut flour

  • 85g vanilla flavour protein powder (I prefer using a vegan protein powder like Garden of Life or Sun Warrior both available on Amazon or local stockists).  

  • 1 whole egg

  • 2 egg whites

  • 1/2 pint or 8 fl. Oz. unsweetened almond milk

  • 1 tbsp. extra virgin coconut oil

  • Dash of pink Himalayan salt


Toppings (optional)

  • 65g fresh or frozen berries

  • 1 banana, sliced

  • Cinnamon

  • 2 tbsp plain Greek yogurt

  • Maple Syrup

Directions

  1. Preheat a non-stick pan over medium-low heat.

  2. Mix all dry ingredients in a bowl and stir until blended well. 

  3. Add the wet ingredients and whisk until thoroughly combined and a batter is formed.

  4. Pour batter onto prepared pan and cook until golden brown, flipping halfway.

  5. Place a serve of pancakes on a plate and top with berries, Greek yoghurt or your favourite healthy topping.

​NOTES: If you like fluffy pancakes you can add 2 teaspoons baking powder in the dry mixture.
